If you have not been to Paradiso 37, Taste of the Americas , its time you head back and check out this restaurant.  It sits on the water of Disney Springs so it has some great views of the water between Disney Springs and Saratoga Springs and you can watch the boats on the water, have a snack, or cocktails and best of all Lunch or Dinner.

Additionally, Paradiso 37 will be offering the full menu for Cinco de Mayo which includes the dishes that were part of our tasting, plus one special dish: Fried Snapper! There will also be a margarita cart offering margaritas for $16 each, and a live Mariachi band to begin performing at 5 p.m.

For those seeking more substantial fare, Paradiso 37 offers enticing entrees like Brazilian roasted half-chicken, Baja fish tacos, grilled Chilean salmon, South Carolina-style pork ribs and Argentinian skirt steak plus a pan-American panoply of mouth-watering burgers, sandwiches and salads.

All New Planet Hollywood Observatory is NOW OPEN

Okay I am a huge movie fan, I love movies!  I like going to the movies, or watching them at home in my little home theater.  I have been a fan of Planet Hollywood since they first opened, so much so that I was at the opening of the one in New York City just to get a glimpse of Arnold, Sly, Bruce and Demi, who back in the day were part of all the openings.  I used to have a collection of polo shirts from many Planet Hollywood restaurants I collected while traveling.

Now Planet Hollywood has been completely reimagined. There are some great additions to the NEW Planet Hollywood Observatory at Disney Springs. They added a huge patio off the second floor, with its own bar and beautiful view of Disney Springs. They built another bar area on the ground level called Stargazers. They have 4 floors, a huge indoor video ceiling, that plays popular videos. The movie artifacts have all been updated. The Stargazers lounge, a 5,000-square-foot outdoor expansion overlooking Disney Springs, allows guests to relax under the stars while enjoying cocktails and live entertainment al fresco.

Its really All About the Food…..

The menu has been updated and has a some new flair from a very popular chef Guy Feieri. Fans will embrace the return of classics such as World Famous Chicken Crunch with Creole mustard sauce playfully plated in a chicken-shaped dish; Nachos Grande piled high with chipotle chicken, cheese and black bean sauce, cruda salsa verde, pico de gallo, queso fresco and sour cream; L.A. Lasagna a fried take on this comfort food favorite with Bolognese sauce, roasted garlic cream and tomato basil sauces; and the epic High Roller Platter, a celebration of “best-ofs” with the Chicken Crunch, Texas Tostados, Buffalo Wings, Cheesy Spinach Dip, Peri-Peri Shrimp served in a uniquely designed Ferris-wheel dish.

For those drawn to delicious indulgences, head straight for Fieri’s new “Big Bite Burgers” and “Signature Sandwiches.” The six burger choices, which are not to be missed, include Fieri’s award-winning Bacon Mac-N-Cheese with applewood smoked bacon, six-cheese mac-n-cheese, cheddar, lettuce, tomato, onion, pickle, crispy onion straws, Fieri’s signature Donkey Sauce, garlic-buttered brioche bun; The Mayor of Flavortown seasoned pastrami, swiss cheese, caraway slaw, pickles, Dijon mustard and Donkey Sauce on a garlic-buttered pretzel bun; and the Prime Time American Kobe with American-style kobe beef, smoked gouda, cheddar, caramelized onion jam, lettuce, tomato, onion, pickle, crispy onion straws, Donkey Sauce, garlic-buttered brioche bun .

A Lobster Feast Fra Diavolo, a spaghetti favorite served in a whole lobster shell and a Sesame Ginger Salmon with cilantro rice are two of eight gussied-up specialty offerings. Steak and rib selections – including the 20 ounce, bone-in NY Strip Steak for two served with roasted garlic and herb butter, steak fries and green bean blend – can now be upgraded to “surf & turf” status with the accompaniment of a whole steamed lobster.

Vegetarians will rejoice with Fieri’s take on the scratch-made Morgan’s Veggie, a burger of black and white beans, chickpeas, oats, artichokes, roasted red pepper with cilantro aioli, lettuce, tomato, onion, pickle, toasted wheat bun and a Pimento Grilled Cheese six-cheese mac-n-cheese, pimento cheese, garlic-buttered sourdough. Healthy options for guests include a selection of five fresh salads like the Citrus Kale, a combination of kale, julienned broccoli, slivered Brussels sprouts and cabbage, feta, grapefruit, oranges, cranberries, sunflowers seeds, agave dressing; and Spinach & Berries with candied walnuts, bleu cheese crumbles and balsamic vinaigrette.

For a sweet finish “Hand-Dipped and Whimsical Milkshakes” include Chocolate Comet and Strawberry Borealis. The dessert menu is filled with goodies such as the Cosmic Cream Challenge, a blind tasting of 12 flavors of house-made ice creams and sorbets; Planet Melt Down, a chocolate hardshell dome, melted tableside by hot chocolate sauce to reveal double chocolate fudge cake, fresh strawberries and whipped cream; and Brownie Sundae Martini, 12 decadent chunks of freshly baked brownies layered with six scoops of vanilla and chocolate ice cream with toppings.

JAPANESE WAGYU BEEF RETURNS FOR A LIMITED TIME TO CAPA RESTAURANT AT FOUR SEASONS RESORT ORLANDO

The Japanese beef known as “wagyu” is famed for its soft, buttery texture, high marbling ratio and superior taste. For steak lovers, it’s often attested that there is no better steak experience than wagyu.  In February 2016, Matsusaka beef, the ultimate within the Japanese beef industry, was directly imported from the Matsusaka Region of Mie Prefecture, Japan and introduced at Capa restaurant at Four Seasons Resort Orlando at Walt Disney World Resort. Now, the rare delicacy is back on the Capa menu for a limited time.

“I’m very happy to partner again with the Matsusaka Region, as the strength of its flavour and delectable fattiness makes it like the ‘dessert’ of beef,” says Executive Chef Fabrizio Schenardi. “Japanese wagyu meets extremely specific characteristics and must come from one specific breed. I love to share this exceptional meat with our guests.”

For ten evenings, February 10 through 20, 2017, the Matsusaka beef is available at Capa, in a special tasting called “From Matsusaka with Love” – perfect for Valentine’s Day. The tasting menu is offered for USD 225 per couple, including a trio of wood-grilled special grade Matsusaka beef: 3-ounce strip loin, 3-ounce tenderloin and 3-ounce ribeye.  An optional wine pairing is available, as well as the full Capa menu for choice of a la carte side dishes.

Matsusaka beef from Mie Prefecture has been recognised and honoured with the highest rankings for decades in the Japanese beef market.

By definition, Matsusaka beef cattle can only be virgin female cows of the Japanese black wagyu variety that have spent the majority of their lifespan, up till the time of slaughter, in Matsusaka City and its surrounding area and are registered under the Matsusaka Beef Identification and Management System.  Some cattle farmers provide beer to cows to stimulate their appetites and give them thorough massages to improve blood circulation and encourage even fat distribution.  Many farms raise their cows in individual rooms so they can be finely managed and assure a comfortable, stress-free life for their cows. Matsusaka beef producers spare no effort to produce the highest quality, richest, most finely dispersed marbling possible while managing their cows on a day to day basis. The rich marbling results in an exquisite taste.

Victoria & Albert’s at Walt Disney World Resort Voted #2 Restaurant in U.S. by TripAdvisor

Victoria & Albert’s at Disney’s Grand Floridian Resort & Spa was voted the No. 2 restaurant in the United States in TripAdvisor’s 2016 Travelers’ Choice awards.

No. 2 out of 10, the Walt Disney World Resort restaurant remains the only Florida restaurant on the illustrious list. Victoria & Albert’s also is a AAA Five-Diamond Award winner, under the helm of Executive Chef Scott Hunnel, Chef de Cuisine Aimee Rivera, maître d hotel Israel Perez and Executive Pastry Chef Erich Herbitschek.

In 2016 the award-winning dining room added a Chef’s Degustation Menu, a series of 10 small courses, along with the seven-course Chef’s Tasting Menu. The smaller Queen Victoria Room offers a 10-course menu paired with exclusive wines from the restaurant’s impressive cellar, and there is a Chef’s Table for up to eight guests in the kitchen.

TripAdvisor branded sites make up the largest travel community in the world, according to the website, with more than 250 million reviews and opinions covering accommodations, restaurants and attractions. Award winners were determined using an algorithm that took into account the quantity and quality of reviews for restaurants around the world, gathered over a 12-month period.

Tiffins, Nomad Lounge Newest Dining Experiences At Disney’s Animal Kingdom at Walt Disney World Resort

I was at the new restaurant and lounge in the Disney’s Animal Kingdom park.  This is a signature restaurant inside a park.

Here is an overview:

Celebrating the adventurous spirit of world travelers and explorers, Tiffins is the newest signature restaurant at Walt Disney World Resort, part of the largest expansion in the history of Disney’s Animal Kingdom theme park.

“Tiffin” is the Indian word for a lunchbox used by travelers (also a mid-day meal), and the 252-seat restaurant in the park’s Discovery Island area is open daily for lunch and dinner with menus that takes diners to Europe, Africa, Asia and the Americas.

“This new restaurant highlights our commitment to introduce new, innovative and immersive experiences only Disney can deliver,” said Beth Scott, vice president of Food & Beverage for Disney Parks & Resorts. “ We are confident that our culinary and beverage professionals have created something that re-imagines theme park dining, and encourage our guests to explore these authentic global flavors just as our Imagineers did when designing Disney’s Animal Kingdom.”

A detailed map within the restaurant’s entryway sets the stage for an immersive dining experience celebrating world travel, with bold artwork derived from sketches, journals and research from those who created the theme park.

“Tiffins is the signature restaurant at Disney’s Animal Kingdom, celebrating the culture of design and research that went into creating this unique park,” said Emily O’Brien, Walt Disney Imagineering executive show producer for Disney’s Animal Kingdom.

“All the senses are explored and turned into amazing works of art,” said O’Brien. “Two of the three ‘galleries,’ or dining rooms, focus on Asia [Trek Gallery with 74 seats] and Africa [Safari Gallery with 64 seats], and the third [Grand Gallery with 114 seats] pays homage to animal species that the Disney Worldwide Conservation Fund works to protect.”

The travel-inspired artwork includes a static, three-dimensional piece that features prayer flags blowing in the wind. “As our research team traveled up the high mountains of Nepal, the winds were strong,” explained O’Brien. “The prayer flags are rarely seen hanging, they are always blowing.” This portrayal of the motion is realistically captured in the display which will hang above a corner booth in the Trek Gallery.

“Tiffins is not about a make-believe place, it’s about real people and places,” said O’Brien.

Global Menu

From the familiar to something new, the menu offers diners starters such a Lobster-Popcorn Thai Curry Soup with Basil and Peanuts (Asia/Africa) and marinated grilled octopus (Europe). Sustainable seasonal fish crudo (South America) and a salad of roasted baby beets and goat cheese with walnut granola and a sun-dried cherry vinaigrette (North America) round out international creations.

Entrées include Berber-Spiced Lamb Chop with Mustard Greens, Lentil Stew and Mint Chutney (Africa); Berkshire Pork Tenderloin with Huitlacoche Tamale, Hominy Succotash and Red Mole Sauce (South America); Miso-glazed Black Cod with Forbidden Rice in Steamed Bok Choywith Turmeric Sauce (Asia), and Grilled Head-on Shrimp with Tomatoes, Roasted Fennel, Olives and Sea Urchin Butter Sauce (Europe). For vegetarians, the Roasted Market Vegetable Curry with Quinoa, Zucchini and Lime Chutney brings a taste of Asia.

The kids’ menu includes roasted chicken, pan-seared cod and braised short ribs with seasonal vegetables and cous cous or multigrain rice, or roasted vegetables served over spaghetti squash.

Beverages focus on Africa, Asia and South America, including handcrafted cocktails and beers. Non-alcoholic beverages include exotic-fruit-flavored lemonades, Asian and African premium loose-leaf teas and coffee beans from Columbia, Ethiopia, Indonesia and Tanzania.

“With a focus on South American and South African wines, the beverage program is very special – we don’t have another one like it at Disney,” said Master Sommelier Brian Koziol, Food & Beverage Concept and Development director for Disney Parks & Resorts. “The program will focus on environmentality: producers that focus on sustainability, organic wines, and bio-dynamic viticulture,” he explained. “Environmentality is a core value at Disney’s Animal Kingdom, and this beverage program is a great way to share that with our guests.”

Nomad Lounge

With beautiful waterfront views, the adjacent Nomad Lounge focuses on storytelling, and also on guests’ travels.

“We’re trying to tell the story of how guests can make a change,” said O’Brien. While the answers of Disney experts are displayed, guests also have the opportunity purchase a tag that supports the Disney Conservation Fund and to write their own answers to the questions to display above the bar– a way to share their own travel stories “so they can be a part of the story,” said O’Brien.

With 55 seats inside, and 46 seats in a covered outdoor area, Nomad Lounge offers a half-dozen small bites such as a vegetarian summer roll, a seared Wagyu beef skewer, honey-glazed coriander-spiced pork ribs, Indian butter-chicken wings, seasonal fish balls with shishito peppers and house-made head cheese and chicken liver pate with chutney.

Like Tiffins, the lounge offers handcrafted cocktails with African, Asian and South American flavors, imported beers and a South American and South African wine list. Non-alcoholic beverages include exotic-fruit-flavored lemonades, Asian and African premium loose-leaf teas and coffee beans from Columbia, Ethiopia, Indonesia and Tanzania.
